A simple hot-buttered rum recipe calls for 2 cups of water, 1/4 cup of unsalted butter, 1/4 cup of packed dark brown sugar and 2/3 cup of dark rum. The recipe also includes 1 teaspoon of cinnamon, 1/2 teaspoon of freshly grated nutmeg and 1/4 teaspoon of ground cloves.
Place a 1 1/2- to 2-quart saucepan over moderately high heat. Place the water, butter, brown sugar, spices and 1/8 teaspoon of salt into the saucepan, and bring the mixture to a boil. Reduce the heat to low, and let the liquid simmer for about 10 minutes, whisking occasionally. Remove the pan from the heat, and stir in the rum. Serve the drink hot.
Alternatively, you can prepare a simple hot-buttered rum by starting with a compound butter. Mix 1/2 stick of room temperature, unsalted butter with 1/2 a cup of packed dark-brown sugar and 1 teaspoon of finely grated orange zest. Add 3/4 teaspoon of ground cinnamon, 3/4 teaspoon of ground ginger and a 1/2 teaspoon of ground nutmeg.
When you are ready to prepare a drink, place 3 tablespoons of the butter mixture into a heatproof glass. Mix 1 1/2 ounces of dark rum into the butter, and pour 3/4 cups of boiling water into each glass. Stir the mixture until it is combined. Finish the drink with a squeeze of fresh orange juice.
