Simple jelly recipes to make at home include Concord grape jelly and pepper jelly. Both recipes take less than 20 minutes to prepare and require sterile jars and canning supplies.
To make Concord grape jelly, combine 3 cups of grape juice, 2 tablespoons of lemon juice, 1 teaspoon of butter and 1 package of pectin. Boil for 1 minute, and add 4 cups of sugar, stirring until it dissolves. Ladle the hot jelly into sterile jars, leaving about 1/4 inch space at the top of each jar. Place the caps on the jars, and process for 5 minutes until the caps seal.
To make pepper jelly, mince 3/4 cups of chopped green bell pepper and 1/4 cup of chopped hot pepper, such as serrano or jalapeño peppers. Combine the pepper mixture with 1 1/2 cups of apple cider vinegar and 6 cups of sugar in a saucepan, and then bring it to a rolling boil. Remove the pan from the heat, and then add 4 ounces of pectin and 4 drops of green food coloring. Pour the liquid jelly into 6 jars, place the caps on top, and process until the caps seal.
When using jars for jelly, make sure the jars and equipment are fully sterile by boiling before pouring the jelly into the jars. Wash your hands before pouring to eliminate bacteria.
