One simple ground chicken recipe is chicken taco salad, which is made with aromatic spices and beans, then topped with lettuce, tomatoes, cheese, cilantro and a salsa-yogurt sauce. Another easy way to prepare ground chicken is to make chicken burgers.
To make chicken taco salad, heat 2 tablespoons of olive oil in a skillet. Add 1/2 an onion, 1 red bell pepper, 2 cloves of garlic and 1 jalapeño, all finely chopped. Sauté for 3 to 4 minutes, or until the vegetables are tender. Add 1 pound of ground chicken, and cook until it is browned, breaking up the meat with a spoon or spatula as you go. Stir in 1 teaspoon each of chili powder and ground cumin, along with one drained and rinsed can of kidney beans, and cook until all the ingredients are warm. Toss the meat mixture with lettuce, tomatoes, shredded cheese and crushed tortilla chips, then top with a mixture made from 1/4 cup of plain yogurt and 1/2 cup of chunky salsa.
To make chicken burgers, add 1 pound of ground chicken, 1 tablespoon of fresh dill, 3 chopped chives, the juice of 1 lemon, 2 minced garlic cloves, 1 teaspoon of dried Italian herbs and 1/2 teaspoon of paprika or chili powder to a bowl. Add a pinch of salt, and mix the ingredients with your hands. Form the meat into four patties, place them in a heated skillet with 1 tablespoon of oil, and fry them until they are cooked through.
