Make a Greek yogurt onion dip by sauteing 1 cup of chopped shallots in 1 tablespoon of olive oil over medium heat along with 1/2 teaspoon of salt. Once the shallots soften, pour 1 teaspoon of balsamic vinegar and 1/4 cup of water into the pan, and cook on medium heat for 12 to 15 minutes. Add the caramelized shallots to 1 cup of Greek yogurt, 1/4 cup of milk, 1/4 cup of chopped chives, 1/2 teaspoon of salt and 1/4 teaspoon of pepper. Chill the dip for 30 minutes to allow the flavors to blend before serving it with fresh vegetables.
