Some easy Greek recipes include tzatziki, a yogurt-based dip, and fassolakia lathera, a green bean casserole with olive oil and tomatoes. To make tzatziki, mix together 3 tablespoons of olive oil, 1 tablespoon of vinegar, 2 finely minced cloves of garlic, 1/2 teaspoon of salt and 1/4 teaspoon of white pepper. In a separate bowl, whisk together 1 cup of strained Greek yogurt and 1 cup of sour cream.
Pour in the olive oil mixture, and stir the ingredients to combine them. Peel, seed and dice 2 cucumbers, chop 1 teaspoon of fresh dill, and stir them into the dip. Refrigerate the dip for two hours or more before serving, and garnish it with fresh dill.
To make the lathera dish, heat 1/2 cup of olive oil over medium-high heat. Cook 1 large diced onion in the oil until it is soft. Mince 2 cloves of garlic, and cook them with the onion for about a minute. Clean and trim 2 pounds of green beans, and cut 2 to 3 medium potatoes into large wedges. Add the green beans, potato wedges and a large handful of baby carrots to the onions and garlic.
Combine 2 tablespoons of tomato paste and 1 1/2 cups of warm water in a separate bowl, and then add it to the pot with 1 cup of canned crushed tomatoes, 1/2 cup of chopped fresh parsley and 1 teaspoon of sugar. Simmer the ingredients over medium-low heat for about one hour until the green beans are soft. About 10 minutes before the dish is done, stir in 1 tablespoon of chopped fresh dill and salt and ground black pepper to taste.
