To make JoyofBaking.com's easy fruit cake, begin by greasing a 9 x 5 x 3-inch loaf pan with butter or non-stick vegetable spray. Preheat the oven to 350 F unless using a dark-colored loaf pan, in which case preheat to 325 F.
Combine 1 cup of firmly packed light brown sugar, 1 cup of water and 1/4 of a cup of diced butter in a large saucepan with 1 teaspoon of ground cinnamon, 1/2 a teaspoon of ground cloves, 1 teaspoon of ground ginger, 1/2 a teaspoon of salt and 2 cups of seedless raisins. Bring to the boil over medium heat. Allow to boil for 5 minutes, and then leave to cool until the mixture is lukewarm.
Stir into the mixture 2 lightly beaten large eggs, 1 1/2 cups of all-purpose flour, 1 teaspoon of baking soda, 1 teaspoon of pure vanilla extract and 1 cup of candied and chopped mixed peel. Pour the mixture into the prepared pan and bake for 50 to 65 minutes or until a toothpick inserted into the middle of the loaf comes out clean. Cool on a wire rack before storing, covered. It is best to wait a few days before serving.
