For Baked Flounder with Parmesan Crumbs, preheat the oven to 425 degrees Fahrenheit. Place 2 pounds of flounder fillets in a large baking dish. Season with salt and freshly ground pepper. When the butter melts and is hot, place the fillets in the skillet. Cook for three minutes until browned and crispy, then gently turn the fillets to repeat the cooking process for the other side. Transfer the fillets to a serving plate. Whisk 1 tablespoon butter into the contents of the skillet. Add the juice from 1 lemon and the contents of a small jar of capers. Whisk the mixture together to create a sauce. Pour the sauce over the fillets, and serve.
