For Baked Flounder with Parmesan Crumbs, preheat the oven to 425 degrees Fahrenheit. Place 2 pounds of flounder fillets in a large baking dish. Season with salt and freshly ground pepper. In a small mixing bowl, mix 3/4 cup grated Parmesan cheese, 1/2 cup coarse-ground bread crumbs, 4 tablespoons melted, unsalted butter and 2 tablespoons extra-virgin olive oil. Sprinkle the mixture over the fillets, and bake for 15 minutes. Allow the flounder to rest for five minutes after removing it from the oven.
For Pan-Fried Flounder, heat 2 tablespoons butter in a heavy skillet over medium-high heat. Season 4 skinless flounder fillets with salt and pepper, then dredge them in flour. When the butter melts and is hot, place the fillets in the skillet. Cook for three minutes until browned and crispy, then gently turn the fillets to repeat the cooking process for the other side. Transfer the fillets to a serving plate. Whisk 1 tablespoon butter into the contents of the skillet. Add the juice from 1 lemon and the contents of a small jar of capers.
