For the easy baked eggplant Parmesan recipe, preheat the oven to 375 degrees Fahrenheit, and place a large rimmed baking sheet inside. Slice 1 large eggplant lengthwise into 1/2-inch thick pieces. Using 1 1/2 cups of panko bread crumbs, coat each slice on both sides. Spread 2 tablespoons of olive oil on the hot baking sheet, and arrange the slices in a single layer. Bake for 15 minutes on one side and 10 minutes on the other side.
Increase the oven temperature to 475 degrees Fahrenheit. Shred 1 cup of mozzarella cheese and 1/2 cup of Parmigiano Reggiano cheese. In an 8-by-10-inch dish, layer 1/2 jar of marinara sauce, eggplant slices and 1/2 of the cheeses. Repeat with the remaining ingredients, ending with cheese. Bake for about 15 minutes, melting the cheese to a golden brown.
For the easy fried eggplant recipe, heat 2 tablespoons of canola oil in a large skillet over medium-high heat. Dip peeled eggplant slices from 1 large eggplant into 3 beaten eggs. Next, dip the slices into 2 cups of dried bread crumbs, and place them in the hot oil. Fry the slices for about 2 minutes on each side. Drain the fried eggplant on paper towels, and serve.
