Add up to 2 cups of filling to your quiche if desired. Meats, cheeses, seafood, vegetables and leftovers make excellent fillings. All filling ingredients need to be fully cooked and fairly dry so the quiche doesn't have trouble setting up.
Use classic combinations of fillings to turn a basic quiche into a more complete dish. For example, you can use a filling of 6 to 8 slices of chopped bacon, 1 diced yellow onion and 1 cup of shredded gruyere cheese to make Quiche Lorraine. Use 1/2 of a diced yellow onion, 1/2 pound of chopped asparagus, 1 diced ham steak and 2 cups of Swiss cheese to create a classic Ham and Asparagus quiche.
A quiche is done when a knife inserted into the center comes out clean, and the middle of the quiche jiggles slightly when the dish is shaken. Allow it to cool for 5 minutes before serving. Some people prefer to refrigerate the quiche overnight and eat it cold the following day. Cut quiche into wedges before serving.Learn more about Cooking
