A simple dinner recipe for two could consist of seasoning boneless pork chops and placing them in a baking dish with acorn squash and apples. The dish is baked at 350 degrees Fahrenheit for 45 minutes or until the squash is tender and the pork is cooked.
Heat the oven to 350 F and slice the acorn squash into rings, removing the seeds. Core an apple and cut it into chunks.
In a small pan, combine 1/3 cup of Bisquick baking mix, 1/2 teaspoon of seasoned salt, 1/8 teaspoon of pepper and five saltine crackers, crushed. In a small bowl, combine an egg white and 1 tablespoon of water. Heat a skillet over medium heat. Dip the pork chops into the egg wash and then into the flour mixture. Place them into the heated skillet and cook them for six to eight minutes or until they have browned. Transfer them into a baking dish.
Arrange apples and squash around the pork in the baking dish. In a small bowl, combine 1/4 cup of brown sugar, 1/2 teaspoon of cinnamon and 1 tablespoon of firm butter. Mix until it resembles coarse crumbs, and sprinkle the mixture over the pork chops, apples and squash. Bake uncovered for 40 to 45 minutes, until the pork chops are cooked and the squash is tender.
