To make the sherbet watermelon, take a bowl and line it with plastic wrap. Soften lime sherbet for a few minutes. Once softened, line the bowl 1/2 inch thick. Freeze this for about 15 minutes. While that is in the freezer, take pineapple sherbet out to soften. Once softened, put a layer on top of the lime sherbet. This layer should be thinner as this represents the rind of a watermelon, which is normally a thin layer. Put this in the freezer.
Take out raspberry sherbet and mix it with some mini chocolate chips. Put this on top of the frozen pineapple layer and make it smooth. Return this to the freezer and let freeze for several hours or overnight. To serve, place the frozen bowl upside down on a serving platter and remove from bowl. Remove the plastic wrap and the watermelon is ready to be served. Slice the dessert to resemble a watermelon.
To make Oreo truffles, start by finely crushing 9 cookies and placing them aside. Crush the rest of the package of Oreos and mix with 8 ounces of softened cream cheese. Once combined, roll into 1-inch balls. Melt baking chocolate and dip the balls into the melted chocolate. Place on wax paper and top with the remaining crumbs.
