Some simple Cuban recipes include the ropa vieja recipe and the picadillo recipe. Other simple recipes include roasted pork sandwiches and shrimp in a cilantro cream sauce.
The recipe for chicken ropa vieja calls for 1 1/2 pounds chicken breasts, 1 small quartered onion, 1 quartered tomato, 1 peeled and cut carrot, and 2 peeled garlic cloves. The recipe also requires 2 tablespoons of olive oil, 1 minced small onion, 2 additional cloves of garlic, 1/2 thinly sliced green bell pepper and 1/2 thinly sliced red bell pepper. Finally, gather 1/4 cup of tomato puree, 1/4 cup of dry white wine, 1 teaspoon of ground cumin, and salt and pepper to taste.
Place the chicken, tomato, carrot, onion and 2 garlic cloves in a large pot, and add some water to cover before bringing the mixture to a boil. Skim the foam as it floats to surface, and then reduce the heat to a medium low, allowing the chicken to simmer uncovered until it is tender, about 40 minutes. When ready, place the chicken in a bowl, and shred it before straining the liquid and discarding the vegetables.
Heat the olive oil in a pan over medium heat, and stir in the remaining vegetables, cooking until the vegetables soften. Stir in the tomato puree, white wine and chicken, and reserve just enough broth to create a thick sauce. Season this mixture with cumin, salt and pepper, and reduce the sauce to coat the chicken.
