The Chocolate Fondue by Chef Tom Bowes of Dip Cafe is a simple chocolate fondue recipe. The fondue calls for just four ingredients: heavy cream, semisweet chocolate, vanilla extract and brandy.
To prepare the recipe, pour 4 inches of water into a saucepan, and bring it to a low boil before placing a mixing bowl in the water. Pour 2 cups of heavy cream into the bowl, and let it heat up while chopping 1 pound of semisweet chocolate into small chunks. Add the chocolate to the warm cream, and whisk the mixture until smooth. Add 1 tablespoon pure vanilla extract and 1 tablespoon brandy, whisking thoroughly. Pour the chocolate into a fondue pot, and light denatured alcohol or handy fuel underneath to keep the mixture warm.
Arrange foods for dipping around the fondue platter, and serve with one fondue skewer for each guest. Suitable dipping items include strawberries, marshmallows, bananas, brownies, pineapple chunks, cookies, cubes of pound cake and your favorite food items. The recipe makes approximately four servings.
For best results, prepare the fondue with a premium semisweet chocolate such as Callebaut or Lindt. For a healthier variation, use half and half instead of whipping cream. For a milder flavor, use milk chocolate or a mixture of milk and semisweet chocolates.
