To easily prepare chili con carne, gather 2 pounds ground beef, 2 onions, 2 bay leaves, 32 ounces canned tomatoes and several garlic cloves. Also organize 1 tablespoon cumin and chili powder, 2 teaspoons salt, 30 ounces canned red beans and 2 teaspoons dry oregano. Cooking takes approximately one hour.
First, mince the garlic cloves, and chop the onions. Leave the cans of tomato and red beans undrained. Add 2 tablespoons of quality olive oil to a sauté pan, heat, then add the onions and garlic. Cook everything until it becomes aromatic. Place the ground beef inside a Dutch oven, breaking it up, but not making it too fine. Brown it, drain the garlic and onions, and add them to the beef.
Add the spices and tomatoes to the Dutch oven, simmering for approximately one hour. Remember to add the juice of the tomatoes as well. After said time has elapsed, add the cans of red beans along with their liquor. The starches in the liquor help the chili thicken. Simmer for an additional 20 minutes, then adjust seasoning to taste. Serve topped with shredded cheddar, if desired.
To quicken further, cook onions, garlic, beef, spices, tomatoes and beans together in a single stage. This reduces cooking time to roughly a half hour. While this approach makes sacrifices in flavor the development, it makes up for it with added convenience.
