Oven roasted chicken breasts in a peppercorn sauce is a simple recipe, and it can be made by covering chicken breasts with mustard, peppercorns, salt and rosemary, before baking in an oven at 350 degrees Fahrenheit for approximately 10 minutes. A red wine or brandy sauce also makes a great accompaniment.

- 1 tablespoon of parsley
- 1/3 cup of chicken broth
- Two shallots
- Extra virgin olive oil
- 1/3 cup red wine or brandy
- 3 tablespoons of Dijon mustard
- 3 teaspoons of ground mixed peppercorns
- 3 large chicken breasts, with skin and bones removed

After pre-heating the oven to 350 degrees, cover the chicken in the mustard first, followed by the peppercorns, salt and rosemary. Gently pat down the seasonings so the flavors get right into the meat. Next, heat a pan to a medium-high heat, add some oil, and brown the chicken on both sides before transferring to an oven dish to bake for 10 to 15 minutes.
Chop the shallots then add them to the pan, cooking until soft. Now add the brandy or red wine, the parsley, a little mustard and the chicken broth. Cook until thickened, then serve with the chicken once ready.
