Some simple chicken Alfredo recipes include Martha Stewart's chicken Alfredo with fettuccine and chicken-zucchini Alfredo from the Food Network. The main ingredients are fettuccine noodles, chicken, butter, heavy cream, Parmesan and garlic.
Make basic chicken Alfredo by cutting 1 pound of chicken breasts into strips and seasoning them with salt and pepper. Saute the chicken over medium heat in 2 tablespoons of unsalted butter. At the same time, add 2 cups of heavy cream and 4 cloves to a small saucepan and simmer for 10 minutes before removing the garlic and adding it to the pan holding the chicken. Stir in 3/4 cup of grated Parmesan cheese into the cream and chicken mixture. Serve the chicken and sauce warm over fettuccine, and sprinkle grated cheese on top.
Chicken-zucchini Alfredo is similar in preparation. Cook the chicken and zucchini in garlic and oil before setting them aside. To make the Alfredo sauce, mix 1 tablespoon of all-purpose flour and 1 cup of cold lowfat milk until all the lumps are removed. In a skillet, heat 1 tablespoon of oil and 1 clove of garlic over medium-high heat, gradually adding the flour mixture and stirring until it boils. Turn the heat to low, and stir in 1/2 cup of evaporated nonfat milk, salt and 3/4 cup of Parmesan cheese. Cook until the cheese is melted, then serve over fettuccine with the zucchini and chicken.
