For a broccoli and cheese dish that does not use the microwave, make a cheddar cheese sauce to pour over the broccoli. Melt 2 tablespoons of butter in a medium saucepan over medium heat. Sprinkle 2 tablespoons of flour over the butter and stir until the mixture is paste-like. Whisk in one and 1/2 cups milk, season with salt and pepper, and bring the mixture to a boil. Broccoli and cheese can also be made into a casserole by stirring together a can of cream of mushroom soup, 1/2 cup milk, 2 teaspoons of mustard, a 16-ounce bag of frozen broccoli and 1 cup of shredded cheddar cheese. Spread the mixture into a baking dish, and top with a combination of 1/3 cup dried bread crumbs and 2 teaspoons of melted butter. Bake the casserole for 30 minutes at 350 degrees Fahrenheit.
