A simple broccoli casserole recipe is Taste of Home’s Cheesy Cheddar Broccoli Casserole, as well as Paula Deen’s Broccoli Casserole. For Taste of Home’s recipe, preheat the oven to 325 F. Cook 2 16-ounce packages of frozen broccoli florets according to package directions, and drain well.
Combine a 10 3/4-ounce can condensed cream of mushroom soup, 1 cup sour cream, 1 cup shredded sharp cheddar cheese and 1 ¼ cups French-fried onions in a large saucepan. Cook over medium heat until heated through, about 4 to 5 minutes. Stir in the broccoli, and pour the mixture into a greased 2-quart baking dish. Bake uncovered for 25 to 30 minutes. Top with ½ cup shredded sharp cheddar cheese and 2 ¾ cups French-fried onion rings; bake 10 to 15 minutes longer.
For Paula Deen’s recipe, preheat the oven to 350 F. Spray vegetable oil cooking spray on a 9-by-13-inch baking dish. Cook and drain 2 10-ounce packages frozen chopped broccoli. Combine broccoli, 1 cup mayonnaise, 1 cup grated sharp cheddar cheese, a 10-3/4-ounce can of condensed cream of mushroom soup and 2 lightly beaten eggs in a large mixing bowl.
Mix well with metal spoon and add to the prepared baking dish. Top with 2 cups of crushed crackers. Evenly pour 2 tablespoons of melted butter over crackers. Bake casserole for 35 minutes until it is browned and set.
