A simple banana cake recipe consists of ripe bananas, flour, butter, sugar, eggs and a few other ingredients. This recipe features a cream-cheese frosting and takes an hour and 15 minutes.
To make the banana cake, preheat the oven to 275 degrees Fahrenheit, and grease and flour a baking pan. In a small bowl, mix 1 1/2 cups of mashed bananas with 2 teaspoons of lemon juice, and set the mixture aside. In a medium-sized bowl mix 3 cups of flour, 1 1/2 teaspoons of baking soda and 1/4 teaspoon of salt.
In a larger bowl, mix 3/4 cup of butter and 2 1/8 cups of sugar until the mixture is smooth. Beat in three eggs one at a time, and stir in 2 teaspoons of vanilla extract. Alternate between adding the flour mixture and 1 1/2 cups of buttermilk. Stir in the banana mixture, and pour the mixture into the pan and bake for one hour. After baking, place the cake in the freezer for 45 minutes.
To make the frosting, mix 1/2 cup of softened butter and one 8-ounce package of cream cheese. Beat in 1 teaspoon of vanilla extract. Add 3 1/2 cups of icing sugar, beating on low speed until combined with the mixture and then on high until the mixture is smooth. Spread onto the cooled cake. If you desire, garnish the cake with chopped walnuts.
