Heat the oven to 350 degrees Fahrenheit and prepare a 9-inch cake tin with baking spray and flour.
Beat the butter and sugar together in a large bowl until they reach a light, fluffy texture. Add the eggs one at a time, beating each into the sugar and butter mixture. Stir in the vanilla, flour, baking soda, cinnamon and salt. Then fold in the apples and walnuts.
Transfer the cake mixture to the tin with a spoon then place into the oven. Cook for up to 40-45 minutes before taking out and leaving to cool for 10 minutes.
Remove the apple cake from the tin and cool for a further 10 minutes before serving.
