The Pioneer Woman features simple appetizer recipes such as jalapeño quesadillas, watermelon pico de gallo and loaded nachos. Additional appetizer recipes include pizza potato skins, queso fundido and puffed pastry pizza.
The recipe for jalapeño quesadillas calls for 6 tablespoons of butter, 4 tortillas, 1 1/4 cups of grated Monterey Jack cheese and 3 thinly sliced jalapeños. The recipe suggests serving the quesadillas with sour cream and cilantro.
To prepare, lightly brown both sides of the tortillas in butter over medium heat, and set aside. In a separate skillet, cook the jalapeños in butter for about 10 minutes or until they have turned golden brown, and remove them from the heat. Add one tortilla back to the original skillet, and top it with half of the cheese, half of the jalapeños, and a second tortilla. Cook the quesadilla on both sides until the cheese has melted and the tortilla is golden. Cut the quesadilla into six wedges, and serve with sour cream and cilantro.
The recipe for watermelon pico de gallo calls for 1/2 of a diced, small seedless watermelon, 1/2 of a diced red onion, 2 seeded and finely diced jalapeños, 1 bunch of chopped cilantro, and the juice of 1 to 2 limes. The recipe also requires 1 each of a red, green and yellow bell pepper seeded and finely diced and 1/2 teaspoon of salt. To prepare, combine all of the ingredients in a large bowl, taste, and adjust the ingredients accordingly.
