The recipe for jalape��o quesadillas calls for 6 tablespoons of butter, 4 tortillas, 1 1/4 cups of grated Monterey Jack cheese and 3 thinly sliced jalape��os. The recipe suggests serving the quesadillas with sour cream and cilantro.
To prepare, lightly brown both sides of the tortillas in butter over medium heat, and set aside. In a separate skillet, cook the jalape��os in butter for about 10 minutes or until they have turned golden brown, and remove them from the heat. Add one tortilla back to the original skillet, and top it with half of the cheese, half of the jalape��os, and a second tortilla. Cook the quesadilla on both sides until the cheese has melted and the tortilla is golden. Cut the quesadilla into six wedges, and serve with sour cream and cilantro.
The recipe for watermelon pico de gallo calls for 1/2 of a diced, small seedless watermelon, 1/2 of a diced red onion, 2 seeded and finely diced jalape��os, 1 bunch of chopped cilantro, and the juice of 1 to 2 limes. The recipe also requires 1 each of a red, green and yellow bell pepper seeded and finely diced and 1/2 teaspoon of salt.
