To make this ambrosia recipe, gather 1/2 cup of heavy cream, 1 tablespoon of sugar, 4 ounces of sour cream, about 3 cups of mini marshmallows and 1 cup of clementine segments, which is about 6 clementines. Also gather 1 cup each of chopped fresh pineapple, freshly grated coconut and chopped toasted pecans. This recipe also calls for 1/2 cup of maraschino cherries.
Have a mixer on hand, and place the cream and sugar into a bowl. Use the whisk attachment to whip until the cream begins to stiffen and peak. At this point, add the sour cream, and continue to whisk together until thoroughly mixed. Add the orange, coconut, marshmallows and pineapple, along with the cherries and pecans, to the cream, and mix until everything combines. Transfer the mixture into a serving bowl, and allow it to cool for about two hours in the refrigerator before serving.
