To make Risotto with Orange Juice, cook 1/2 cup onions and 2 tablespoons shallots in a large pot with 3 tablespoons olive oil. Add 2 1/2 cups Arborio rice, and toast for one or two minutes. Next, add 1/2 cup dry white wine and rinds of 3 oranges, stirring until the rice has absorbed all of the wine. Add 1/2 teaspoon salt and 1/2 cup hot chicken stock. Continue adding chicken stock in 1/2 cup increments, stirring constantly, until 5 1/2 cups of chicken stock have been added. Slowly add juice from 3 oranges, or about 1 cup. Continue stirring the mixture until the rice is creamy, about 20 minutes. Remove from heat, and stir in 2 tablespoons of butter and 1/2 cup Parmigiano-Reggiano cheese. Add salt and pepper to taste.
For Marinara Sauce, heat 1/4 cup extra-virgin olive oil in a pan, and add 8 peeled and crushed garlic cloves. Once the garlic is browned, add 35 ounces of canned crushed tomatoes. Bring to a boil, and season with salt and peperoncino. Simmer for about 20 minutes, then stir in 10 leaves of fresh basil.
