What Are Some Side Dishes for Ham?

Two delicious side dishes for ham are lemony green beans with almond breadcrumbs and potato, as well as squash and goat cheese gratin. Available from The Kitchn, both recipes offer a contemporary twist on traditional holiday ham side dishes.

To make the lemony green beans, blanch and sliver 1 1/2 pounds of fresh green beans. In a pan with olive oil, cook 1/2 cup of toasted and ground almonds, 1 clove of minced garlic, 1/2 cup of breadcrumbs, and the juice and zest of 1 lemon. Toss the cooked green beans in the lemon vinaigrette, and sprinkle with more almonds and breadcrumbs.

To make the gratin, thinly slice 2 medium squash and 4 medium red potatoes. Toss the sliced vegetables with olive oil, and place an even layer on the bottom of a greased casserole dish. Add a layer of about 2 ounces of goat cheese, another layer of vegetables, another 2 ounces of goat cheese and a final layer of vegetables. Pour 1/4 cup of milk over the casserole, add 1/3 cup of Parmesan cheese and season with salt and pepper. Bake covered at 400 degrees Fahrenheit for 30 minutes and then uncovered for 15 minutes.
