To make the lemony green beans, blanch and sliver 1 1/2 pounds of fresh green beans. In a pan with olive oil, cook 1/2 cup of toasted and ground almonds, 1 clove of minced garlic, 1/2 cup of breadcrumbs, and the juice and zest of 1 lemon. Toss the cooked green beans in the lemon vinaigrette, and sprinkle with more almonds and breadcrumbs.
To make the gratin, thinly slice 2 medium squash and 4 medium red potatoes. Toss the sliced vegetables with olive oil, and place an even layer on the bottom of a greased casserole dish. Add a layer of about 2 ounces of goat cheese, another layer of vegetables, another 2 ounces of goat cheese and a final layer of vegetables. Pour 1/4 cup of milk over the casserole, add 1/3 cup of Parmesan cheese and season with salt and pepper. Bake covered at 400 degrees Fahrenheit for 30 minutes and then uncovered for 15 minutes.Learn more about Meat
