Tofu sold in sealed packages can be eaten raw. Tofu stored in water baths, which is the case for some tofu sold at health food stores, must be cooked before it is eaten to prevent food-borne illness.
Tofu sold out of water baths can spread food-borne illness. This is because the water baths sometimes become contaminated. Such tofu is safe to eat when it is cooked to an internal temperature of 160 F.
Tofu that comes in sealed packages can be served without cooking. Silken tofu, often sold in sealed packages due to its softness, can be added to smoothies, dressings and dips.
