Shocking the vegetables means placing them into ice water. The blanching and shocking process slightly cooks the vegetables, but they remain crisp. Vegetables such as broccoli, cauliflower, green beans, snap peas, and asparagus make delicious additions to a veggie tray after blanching and shocking.
