Raw asparagus can be served in salads and soups. Shaving raw asparagus and tossing it with olive oil, lemon juice, Parmesan, and salt and pepper to taste is a great way to eat raw asparagus.
Raw asparagus soup is also easy to prepare. The recipe calls for 12 stalks of asparagus, 8 ounces of mushrooms, 2 avocados, 1 medium onion, 3 cups of water, and salt and pepper to taste. Use a blender to puree all ingredients until a smooth consistency is achieved, and serve raw. The soup can be garnished with chopped onions, mushrooms and asparagus. Dehydrating the mushrooms and asparagus beforehand intensifies the flavors.
