Starbucks hasn't revealed the recipe for its popular lemon loaf cake, but a good copycat recipe is featured on the Chicago Tribune website The ingredients for this cake include enriched flour, sugar, egg, unsalted butter, cultured buttermilk and lemon juice. Powdered sugar, lemon extract and whole milk constitute the icing.
Make copycat Starbucks lemon cake by combining 1 1/2 cups of flour and 1/2 teaspoon each of baking soda, baking powder and salt in a large bowl. In another bowl, combine 3 eggs, 1 cup of sugar and 2 tablespoons of softened butter. Add 1 teaspoon each of vanilla and lemon extract to the mixture. Pour in 1/3 cup of lemon juice, and blend the ingredients with an electric mixer. Pour the lemon mixture into the dry mixture, and blend thoroughly. Next, pour the mixture into a generously greased loaf pan, and bake it for 45 minutes at 350 degrees Fahrenheit.
To make icing for a lemon loaf cake, combine 1 cup plus 1 tablespoon of powdered sugar, 2 tablespoons of whole milk and 1/2 teaspoon of lemon extract in a small bowl. Beat the mixture on low speed, and then frost it generously on top of the cooled cake.
