- 1 large, cauliflower
- 1 pound, diced artichokes
- 2 tablespoons, olive oil
- 1 teaspoon, grated ginger
- 1 teaspoon, ground cumin
- 1/2 teaspoon, ground turmeric
- Salt and pepper
- Cooked quinoa
- Preheat the oven
- Prepare the vegetables
- Sear the vegetables
- Bake until tender
Preheat the oven to 400 degrees Fahrenheit.
Clean and trim the cauliflower and cut into 3/4-inch thick steaks through the core. Dice the artichokes and season the vegetables with salt and pepper.
Sear the vegetables in 1 tablespoon of olive oil over medium-high heat. Brown the cauliflower on both sides. Transfer the vegetables to a baking sheet.
Mix the ginger, cumin and turmeric with 1 tablespoon of olive oil and brush over the vegetables. Bake in the oven for about 15 minutes, or until tender. Serve with the quinoa and garnish with fresh cilantro.
