Salt, black pepper and garlic powder are used in some popular recipes for fish batter. Spicier batter recipes use seasonings such as cayenne pepper, cumin, paprika, lemon pepper and onion powder.
Beer batters are popular for fish and can be made using simple seasonings or with Cajun-style mixtures. A good spicy beer batter recipe calls for 1/2 cup all-purpose flour and 1/4 cup whole-wheat pastry flour with 3/4 cup pilsner or lager beer. The seasonings consist of 1/2 teaspoon salt and 1/4 teaspoon each of dried oregano, dry mustard, cayenne pepper and fresh ground black pepper. The mixture accommodates 1 to 1 1/4 pounds of tilapia or any other firm white fish.
