Brown rice can be seasoned with sugar, kosher salt, black pepper, rice wine vinegar and olive oil. Tomatoes and basil are also included in the recipe, and it takes 45 minutes to prepare six servings.
- Collect the ingredients
Start with 1 cup Texmati brown rice. Also gather 2 teaspoons of divided kosher salt, 1/4 cup rice wine vinegar, 2 teaspoons sugar, 1 tablespoon olive oil, ground black pepper, 1 pound of ripe large-diced tomatoes and 1 packed cup of chopped basil leaves. Champagne can be used in place of the rice wine vinegar.
- Boil the rice
Put 2 1/4 cups water in a pot. When the water comes to a boil, pour 1 cup rice and 1 teaspoon salt into the pot. Cover and let simmer for 30 to 40 minutes. Once the rice is tender and the water is gone, remove the pot from the stove, and place the rice in a bowl.
- Prepare the seasonings
In a separate bowl, mix the rice wine vinegar, sugar and olive oil. Add the remaining teaspoon of salt along with a bit of pepper. Pour the mixture over the rice.
- Add the tomatoes and basil
Place the tomatoes and basil in the bowl with the rice. Stir well, and taste to check the seasonings. Serve the completed recipe at room temperature.
