Wash the beans off, and add 3 cups of water to the pot. Boil on a range set to high heat, then turn the heat down. Cover the pot, and let it simmer for 30 minutes. Scoop away any foam that forms on the surface.
Chop one medium-size onion, and mix it with the beans. Let the beans simmer for an additional 30 minutes.
Put three pressed garlic cloves, 1/2 teaspoon of dried oregano leaves, 1/2 teaspoon of ground cumin and a dash of red pepper flakes into the pot. Keep it uncovered, and let the beans simmer for another 30 minutes while periodically stirring.
Mix 2 teaspoons of sugar and 2 tablespoons of white wine vinegar with the beans. Taste before serving, and add salt and ground back pepper if necessary. Garnish with chopped scallions.
