  • 5 cups water
  • 2 cups egg noodles, uncooked
  • 1 pounds beef cubes
  • 1/2 teaspoon salt
  • 1 tablespoon butter or margarine
  • 1 small onion, peeled and minced
  • 8 ounces cremini mushrooms
  • 1 garlic clove, peeled and minced
  • 3 tablespoons all-purpose flour
  • 1 tablespoon soy sauce
  • 1/2 teaspoon ground black pepper
  • 1 1/2 cups beef broth
  • 3 sprigs fresh thyme
  • Vegetable oil cooking spray
  • 5 cups water

Directions

  1. Add cold water to a large pot. Add 1/4 teaspoon of salt.
  2. On a medium-heat setting, bring the water to a rapid boil.
  3. Add the uncooked egg noodles, and cook until the noodles are al dente.
  4. Drain water from the pasta with a colander and set the noodles aside.
  5. Heat a large nonstick skillet over medium to high heat.
  6. Coat the skillet with a generous coating of vegetable oil spray or one tablespoon vegetable oil.
  7. Heat the skillet over medium-high heat. Add cubed beef to hot skillet. Saute for 5 minutes, ensuring that all sides are evenly browned.
  8. Remove browned meat from skillet, setting it aside in a covered dish.
  9. Melt butter or margarine in a pan over medium heat.
  10. Slice mushrooms and add them to the pan.
  11. Stir in onion and soy sauce. Saute mushrooms and onions for 4 minutes.
  12. Add the minced garlic and saute for an additional 30 to 45 seconds.
  13. Add flour to pan, mixing thoroughly to thicken the sauce. Cook for one minute, stirring constantly.
  14. Add salt, black pepper and thyme sprigs. Bring the contents to a full boil.
  15. Reduce heat. Cook for an additional two to 3 minutes or until the sauce has thickened to the desired consistency.
  16. Transfer the browned beef cubes to the sauce and stir well. Cook until thoroughly heated.
  17. Remove thyme sprigs and discard them.
  18. Serve beef tips in mushroom sauce over prepared noodles.
