To prepare the maple-glazed carrots, peel 12 large carrots, and cut them into 2-inch-long strips. Warm up 8 tablespoons of butter over medium-low heat in a pan, and stir in the carrots. Cover the pan, and cook the carrots for approximately 20 minutes before switching the heat to the medium setting.
Add 1/4 cup of maple syrup, and squeeze in some lemon juice. Cook the mixture for two more minutes. Add salt and pepper to taste, and incorporate 1 tablespoon of fresh thyme leaves.
To make the paprika chicken, cut a 3.5-pound chicken into eight pieces, and sprinkle with salt and pepper. Brown both sides of the chicken with 1/4 cup of hot lard or oil in a large saucepan over medium-high heat. Remove the chicken, and set it aside. Soften 1 minced yellow onion in the saucepan before stirring in 3 tablespoons of Hungarian sweet paprika.
Put the chicken back into the saucepan, along with 2 cups of chicken stock, 2 diced plum tomatoes and 1 chopped Italian frying pepper. Bring the mixture to a boil before lowering the heat and letting the mixture simmer, partially covered, for approximately 30 minutes or until the chicken is done.
