To quickly make garlic sautéed spinach, sauté 1 1/4 pounds of spinach in a pan with 2 tablespoons of very hot oil for two minutes. Add three diced garlic cloves and continue cooking for 30 seconds. Remove from the heat, and add the juice of one lemon, pepper and salt.
To make garlic sautéed spinach the traditional way, heat 2 tablespoons of olive oil in a Dutch oven or a large pot, and saute 2 tablespoons of chopped garlic for about one minute over medium heat. Add 1 1/2 pounds of spinach leaves, stir well, cover and cook for two minutes. Uncover, raise the heat, and cook while stirring for one more minute. Serve the spinach in a serving bowl, and top it with 1 tablespoon of melted butter, some salt, pepper and the juice of one lemon.
