For MyRecipe.com's Skillet Sausage and Rice, cut up 1-16-ounce package of smoked sausage into 1/2-inch slices. Saute in large non-stick skillet over medium-high heat for eight to ten minutes or until lightly browned. Remove sausage from skillet and drain on paper towels, reserving 1 tablespoon of drippings in skillet.
Chop 1 medium-sized green bell pepper and 1 small onion. Mince 1 garlic clove. Add bell pepper, onion and garlic to skillet and saute 4 minutes or until tender. Add 1 cup of chicken broth and stir to loosen particles from bottom of skillet. Bring to a boil.
Use 2-3.5-ounce bags of quick-cooking brown rice. Remove rice from cooking bags. Add rice, sausage, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper to skillet. Reduce heat to medium-low, cover and cook for 5 minutes or until rice is tender. Garnish with fresh parsley, if desired.
For Taste of Home's oven Jambalaya recipe, combine these five ingredients in a large bowl: 2-1/4 cups of water, 1-1/2 cups uncooked long grain rice, 1-10.75-ounce can of undiluted condensed celery soup and 1-10-once can of undrained diced tomatoes and green chilies. Transfer to a greased 13-inch x 9-inch baking dish. Cover and bake at 350 degrees Fahrenheit for 40 minutes.
Remove from oven, stir in 1 pound of smoked sausage cut into 1/2-inch slices and 1 pound of cooked medium shrimp, peeled and deveined. Cover and bake 20-30 minutes longer, or until rice is tender.
