A sausage egg casserole whose recipe appears on AllRecipes.com contains ground pork sausage, butter, green onions, mushrooms and eggs. Other ingredients include cottage cheese, shredded Monterey Jack cheese, green chili peppers, flour and baking powder.
To make the casserole, cook 3/4 cup of sausage in a large, deep skillet over medium heat. Then drain the sausage and set it aside. Melt 1 tablespoon of butter in the skillet. Cook four chopped green onions and 1/2 pound of fresh, sliced mushrooms until they are tender.
Next, mix 10 eggs, 16 ounces of low-fat cottage cheese, 1 pound of shredded Monterey Jack cheese and 4 ounces of drained canned chilis in a large bowl. Add the sausage, green onions and mushrooms. Cover the bowl and leave it overnight in the refrigerator.
The next day, preheat the oven to 350 degrees F. Grease a 9- x 13-inch baking dish. Sift together 1 cup of flour, 1 teaspoon of baking powder and 1/2 teaspoon of salt. Blend the dry mixture with 1/3 cup of melted butter and combine with the egg mixture. Pour everything into the greased baking dish.
Bake the casserole for 40 to 50 minutes until lightly browned. After removing it from the oven, let it sit for around ten minutes and then serve.
