White wine, mixed with butter and broth is one option for a sauce when preparing scallops. Another sauce uses tart apples cooked in the pan juices after the scallops. The apples combined with butter and pan drippings create the sauce. A cream sauce can also be made using morels.
To prepare a sauce for scallops, combine 1/2 cup of chicken broth, 1/4 cup of wine, 1 tablespoon of minced shallots and 1 clove of garlic, minced. Add the juice from half of a lemon, and simmer until the sauce has been reduced and thickened. Add 1/4 cup of butter, and stir until melted. Serve with the scallops.
