Safeway's 2-hour Turkey Recipe
This recipe saves time in preparing Thanksgiving dinner. It can be used with a turkey as large as 24 lbs.

- 1 whole turkey, fully thawed if frozen
- 1 to 2 tbsp. olive oil
- Kosher salt
- Prepare the turkey
- Set up the rack
Remove the truss that holds the turkey legs together. Trim off the excess fat, neck and giblets. Rub the turkey's skin with olive oil, salt and pepper.
Set up an adjustable v-shaped rack in a roasting pan so the bird is a minimum of 2 inches from the bottom. Place the bird on the rack breast-up. Twist the turkey's wings so they fold under its body. Use aluminum foil to cap the drumsticks and the underside of any part of the bird which is outside the pan. Do not stuff the bird. Place an oven-safe meat thermometer in the breast.
Depending on the size of the bird, cook for 50 minutes to 2.5 hours. Halfway through cooking, rotate the turkey in the pan. After removing it from the oven, let it sit for 30 minutes or more.
