To freeze banana peppers, wash and stem them, remove the seeds and freeze them in a single layer on a tray. Once the peppers are frozen, store them in a seal-able freezer bag.

To prepare the peppers for freezing, wash them thoroughly. Cut off the stems and cut each pepper in half. Remove the seeds and scoop the membranes out of the peppers. Chop, dice or slice the peppers, or cut them into strips.
Lay the peppers out on a baking sheet. Keep the peppers in a single layer. Place the sheet in the freezer and let them freeze for at least an hour.
Once the peppers are frozen, put them into one or more seal-able freezer bags. Before sealing each bag, squeeze out as much of the air in the bag as possible. Store the bags in the freezer.
To use the peppers, simply take the desired amount out of the bag, squeeze out any air, seal the bag and put it back in the freezer. To quickly thaw frozen peppers, rinse them with warm water or place them in a bowl of warm water.
