A simple recipe for sausage gravy involves cooking 1/2 to 1 cup of sausage and using basic ingredients to prepare a gravy to enjoy as a side dish or over biscuits, grits or and mashed potatoes. For extra-thick gravy, add more milk.
After cooking the sausage in a skillet, remove the sausage and most of the grease, leaving approximately 2 to 3 tablespoons. Over medium heat on a stove, add 3 tablespoons of flour to the grease. Stir until the mixture is brown, which takes about five minutes.
Add at least 1 cup of milk and season the mixture with salt and pepper. Keep stirring until the gravy reaches the consistency you like, and add the amount of sausage you want back into the pan.
Another recipe involves 4 ounces of sausage, 3 green onions, 3 tablespoons of butter, 1/4 cup of flour and at least 2 1/2 cups of milk. Brown the sausage over medium heat, breaking up the meat and adding the onions and butter.
Mix in the flour and cook for three minutes. Add the cold milk slowly and bring the gravy to a simmer. Reduce the heat to low and stir occasionally for 15 minutes. Add salt, ground black pepper and cayenne to taste.
