Make artichoke and spinach dip by melting 8 ounces of grated Monterey Jack cheese and 8 ounces of cream cheese in 1 1/2 cups of half-and-half in a saucepan at a simmer with 1 teaspoon of garlic powder, 1 1/2 teaspoons of Worcestershire sauce, 1/2 teaspoon of salt and pepper to taste. Add 3/4 pound of fresh chopped spinach, two 14-ounce cans of drained and chopped artichoke hearts and 4 chopped scallions. Once the spinach wilts, remove the dip from the stove, and serve with chips or crackers.
To make spinach and artichoke dip, stir 1/2 cup of sour cream, a 14-ounce can of drained and chopped artichoke, 1 10-ounce packaged of frozen thawed spinach and 2 8-ounce block of softened cream cheese in a bowl, and season the mixture with 3 minced garlic cloves and 1/4 teaspoon of black pepper. Fold in 4 ounces of mozzarella cheese and 2 tablespoon of Parmesan, and scrape the dip into a baking dish. Top the dip with 1/2 cup of mozzarella cheese and 2 tablespoon of Parmesan, and bake it for 30 minutes at 350 F. Broil the dip for 3 minutes to brown the cheese before removing from the oven and serving.
