An example of a round roast recipe is herb-crusted roast beef with horseradish cream sauce. This recipe takes 75 minutes to make and requires a food processor, wire rack and pan.
To make herb-crusted roast beef, purchase a 3-pound boneless beef eye round roast. Rub salt and pepper on it, then brown it in 2 tablespoons of vegetable oil in a pan over medium-high heat. Turn the roast so that all sides are evenly cooked. After 10 minutes, transfer the roast to a wire rack on a roasting pan.
In the food processor, grind 5 cloves of garlic, 1/2 bunch of fresh thyme, 1 bunch of parsley, 8 sprigs of fresh oregano, 2 sprigs of fresh rosemary and 2 tablespoons of mustard powder. Once a powder forms, gradually add in salt and pepper to taste and 1/2 cup of oil to form a paste. Rub the mixture all over the roast, and bake it at 350 degrees Fahrenheit for up to 45 minutes, or until the internal temperature is 125 degrees. Remove the roast from the oven, and let it rest for 10 minutes before serving.
While the roast cooks, mix together the horseradish cream sauce. Combine 1/2 cup of sour cream, 2 tablespoons of prepared horseradish, salt and 1 tablespoon of lemon juice in a bowl. Refrigerate until the roast is ready to serve.
