A good recipe that uses sweet pickled jalapenos is the Vietnamese-style turkey sandwich with pickled jalapeno slaw from MyRecipes.com. Another good recipe is the Bread and Butter Jalapeno Dip from TastyKitchen.com.
To make the sandwich, blend 1 cup of mayonnaise, 1/3 cup of finely chopped cilantro, 3 tablespoons of finely chopped sweet pickled jalapenos and 3 tablespoons of rice wine or white wine vinegar in a blender or food processor until smooth. Season to taste with salt and pepper. Reserve 1/4 cup of the mixture, and refrigerate the rest.
Combine the mixture with 1 package of coleslaw mix and 1 halved and thinly sliced onion in a bowl. Season to taste, and let stand for 15 minutes. Bring 1/2 cup of reduced sodium chicken broth and 2 tablespoons of hoisin sauce to a boil in a 12-inch skillet over high heat. Reduce heat to low, stir in 4 cups of shredded cooked turkey, and simmer for 5 minutes or until thoroughly heated. Stir occasionally.
Spread an even layer of the refrigerated mixture on four split hoagie or Italian rolls. Top with the turkey and half of the coleslaw, and serve with the remaining coleslaw.
To make the dip, use a mixer to blend 24 ounces of softened cream cheese with one 16-ounce jar of bread and butter jalapenos in a bowl. Serve with crackers or chips.
