A good copycat recipe for Jason's Deli gingerbread muffins requires molasses, butter, buttermilk, an egg and numerous dry ingredients. While an oven heats to 350 degrees Fahrenheit, mix the wet and dry ingredients separately before gently blending them together. Pour the batter into a lightly greased muffin pan and bake for 15 to 20 minutes, or when a toothpick comes out clean when poked into a muffin.
The wet mixture includes 1/2 cup molasses, 1 cup buttermilk, 1 egg and 1/2 cup melted butter. Spices added to the dry mix consist of 1 teaspoon cinnamon, 1/2 teaspoon salt and 1/4 teaspoon nutmeg. The remaining dry ingredients require 2 1/2 cups of flour, 1 1/2 teaspoons baking soda and 1 cup dark brown sugar.
A variant to the recipe uses 2 eggs, 3/4 cup molasses and 1/4 cup milk. It also replaces the brown sugar with 1/2 cup granulated sugar and adds 1/4 teaspoon of cloves to the spices. Lastly, it reduces the amount of baking soda to 1 teaspoon and adds 1 teaspoon of baking powder. The cooking time remains the same.
For both variations of the recipe, fill each muffin hole 3/4 full, and allow the muffins to cool for five minutes after removing from the oven before eating. The muffin recipe works equally well for full-size or miniature muffins.
