Place the shrimp in a glass bowl, and pour 1 cup of fresh lime juice over them. Cover the bowl with a lid and let the shrimp marinate for approximately 10 minutes, or until they turn pink and are opaque. While the shrimp are marinating, dice 10 plum tomatoes, 1 large yellow onion and 1 jalapeno pepper and combine in a large stainless steel, glass or plastic bowl. If you wish, you may also dice and add two avocados and two ribs of celery.
Remove the shrimp from the lime juice, saving the juice for later use. Dice the shrimp, and add them to the vegetable mixture. Pour the leftover lime juice marinade over the shrimp and vegetables. Add chopped fresh cilantro, salt and pepper to taste, and toss gently.
