Easy Spinach Salad
Spinach is a slightly bitter green popular for use in salads. It makes a hearty salad all on its own when served with a warm bacon dressing.

Warm up a skillet with the olive oil in it over medium heat. Add the bacon to the skillet. Cook until it is nice and crispy.
Chop the shallots and garlic and put them in the pan with the drippings. Saute for about 4 minutes.
Add the vinegar to the pan. Cook further until the pan deglazes.
Place the 3 pounds of spinach into the hot skillet. Keep turning the spinach in the skillet to cover it with hot oil and to wilt it. Do not cook it completely. It should only be in the skillet for a short time before being removed and placed on a plate.
Sprinkle the spinach greens with salt, pepper and nutmeg to taste. Peel and quarter the boiled eggs and place them on the salad. Crumble the bacon and top it on the salad. Finish up with shaved Parmesan cheese.
