Food Network has a simple and easy-to-follow recipe for cannelloni that is stuffed with sweet Italian sausage, Parmesan and ricotta cheese. The recipe makes six servings.
To make Food Network's recipe, heat 1 tablespoon extra-virgin olive oil in a skillet, and saute 1 diced medium yellow onion. Add 8 ounces sweet Italian sausage with the casings removed, and cook for 10 to 12 minutes, or until the meat is no longer pink. Drain the fat, and set aside. In a bowl, combine 10 ounces thawed and squeeze-dried chopped spinach, 15 ounces ricotta, 1 1/2 cups Parmesan, 3 large eggs, the sausage mixture, salt and freshly ground black pepper. Preheat the oven to 400 degrees Fahrenheit.
Cook eight pasta rectangles for one minute in boiling salted water, and set aside. In a baking dish, pour and spread 2 cups tomato sauce. Spread 6 tablespoons of the meat filling on each pasta rectangle, and roll tightly. Repeat for all eight pasta rectangles. Place the cannelloni in a single layer in the baking dish with the seam-side down, and top with 2 cups tomato sauce. Top with 1/2 cup grated Parmesan, and bake for 20 minutes. Serve with fresh basil for garnish, if desired.
