An easy recipe for 15-bean soup is called 15! Bean! Soup, and while very easy, does require either an overnight soak, or a long cook time. It's best to plan ahead when making this dish.
Soak a 16- to 20-ounce bag of dried mixed beans overnight, or boil them according to the directions on the package, along with the seasoning packet. In a crockpot, combine the beans, an 8-ounce can of tomato sauce, 3 ham hocks or 1 meaty ham bone, a 16-ounce can of diced tomatoes, 4 cloves of minced garlic, 1 chopped onion, 3 stalks of chopped celery and 3 chopped carrots. For the soup stock combine 6 cups of water, 2 chicken bouillon cubes and 2 bay leaves, plus salt and pepper to taste.
Cook the soup on the high setting for 6 to 8 hours or until the beans are soft. Remove the hamhocks/hambone and bay leaves. Strip any meat off the hocks/bone and add back to the soup (optional).
This recipe can be made less time consuming by cooking the soup on the stove top for 3 to 4 hours, or until the beans are soft.
The total prep and cook time for this recipe is 6 hours and 10 minutes, and it serves 8 to 10 people on a chilly evening.
