Rutabaga recipes include rutabaga puff, roasted rutabaga and lemon carrots and rutabaga. Roasted rutabaga is the simplest recipe, while the lemon carrots and rutabaga recipe takes the least amount of time to make.
To make a rutabaga puff, cook 1 peeled and cubed rutabaga in boiling water for 45 minutes. Transfer to a bowl and mash until smooth. Mix in 1/2 cup of Miracle Whip dressing, 1 egg, 1/4 cup of flour, 1/4 teaspoon of baking powder, 1/4 teaspoon of ground nutmeg and 1/4 teaspoon of onion powder. Pour the mixture into a greased casserole dish and top with 12 crushed crackers. Bake for 35 minutes at 375 degrees Fahrenheit.
To make roasted rutabaga, peel and cube a rutabaga, and toss the cubes with 3 tablespoons of olive oil and salt and pepper, to taste. Roast for 40 minutes at 425 degrees Fahrenheit, and toss with 1/2 teaspoon of cider vinegar and chopped parsley.
To make lemon carrots and rutabaga, bring to a boil 4 julienned carrots, 1 peeled and julienned rutabaga and 1/2 cup of water. Reduce the heat to medium, cover and simmer for 13 to 15 minutes. Combine 2 tablespoons of butter, 1 tablespoon of brown sugar, 1 tablespoon of lemon juice, 1/2 teaspoon of grated lemon peel and 1/4 teaspoon dill weed in a saucepan. Cook over medium heat for two to three minutes. Drain the vegetables and add them to the butter mixture. Cook for three to four minutes, stirring occasionally.
